I absolutely love and enjoy feasting on hotdogs and burgers fresh off the grill along with endless amounts of delicious salads and sugary treats. I have been personally craving a big slice of homemade coconut cream pie, but since we aren’t able to celebrate like we normally do this year, what better time than to create my own macro friendly sweet smoothie as a replacement.
My six-year-old son, Jaxxen, asks for a smoothie at least once a week, so this was the perfect opportunity to get creative and make a patriotic, creamy coconut cream pie smoothie. He was not disappointed, especially when I let him get creative and throw in his favorite animal crackers as the faux crust and garnish the top with some sweet shredded coconut. I love being able to include my kids in meal prepping and choosing different food options and tastes. I want them to grow into healthy adults fully aware that there will always be a healthier and more nutrient dense option in any type of healthy lifestyle. I do not like to deprive them of tasty treats, but sometimes the homemade treat tastes just as good, just like this smoothie. I can rest easy knowing he got a full meal with quality ingredients I can trust, and he has a full toothless grin in return!
This creamy shake is packed full of vitamins and minerals along with high quality plant protein, making it a great addition to a clean and healthy diet. I also decided to add AMPD Nutrition’s marine collagen to get an extra skin glowing boost of nutrients! It is extremely nutrient dense with some awesome immune boosting and brain health benefits from the coconut milk. I chose to add a gluten free animal cracker as the crust ingredient due to my glute sensitivities, but graham crackers would also be another great substitute. The coconut milk could also be substituted with a different style of nut-based milk or dairy. The taste may not be as desirable, but it would still make a great healthy shake!
