Double Chocolate Protein Muffins

There is truly nothing in this world, than I love more than chocolate- except when its chocolate muffins! ESPECIALLY when they are macro friendly, guilt free, packed full of protein!  

If I haven’t already convinced you to make them, I’m here to make this decision even easier for you! You don’t even have to mess up your kitchen- All the ingredients can go into your blender, than poured into muffin cups and straight into the oven! 
 

Add them into your meal prep, make them while you drink your morning coffee, or whip them up for a mid day snack!

Simple, easy and delicious!

INGREDIENTS

3/4 Cup of Oats
2 Ripe Bananas 
3/4 Cup of AMPD Pro Cacao
1 Tablespoon of Cacao Powder
1/2 Cup of Unsweetened Almond Milk
2 Eggs (or flax eggs to make this vegan)
1/2 Teaspoon of Baking Soda
1/2 Teaspoon of Baking Powder
1/2 Cup of Chocolate Chips + a few extra for topping! 

HOW TO…

1. Preheat of to 350 degrees Fahrenheit.
 
2. Add oats, bananas, AMPD Pro Cacao, and almond milk into the blender and blend until smooth. 
 
3. Add the eggs, baking soda, cocoa powder and baking powder and blend on low until combined.
 
4. Use a spatula to mix in the chocolate chips and and transfer the muffin mix from the blender into your muffin tin, that’s lined with paper or silicone liners. Batch should make around 8-9 muffins. 
 
5. Sprinkle extra chocolate chips on top and bake for 35 minutes or until a toothpick comes out clean.
 
Enjoy for a snack or for pre or post workout fuel!
